To make perfect packaged puddings, along with pies, pastries and pizzas you need to understand permeability.  Especially the vapour permeability of packaging, edible films and coatings.

Packaging is designed to keep food fresh and long-lasting – which is does by either excluding or encouraging the flow of a vapour, usually water vapour, oxygen, CO2, nitrogen or argon, depending on the product. Edible films and coatings are intended to keep a barrier between the different parts of a product along with the moisture they contain.  For example a pie's filling needs to be kept from the pastry, a pizza's base from its topping and a sponge from the filling. 
Packaging, barriers and coatings also protect against contamination, maintain aromas and can even create modified atmosphere areas within a product.  However, the key is the vapour permeability of these elements – and that's where Versaperm comes in.

Versaperm's latest vapour permeability meter range can show you just how well your films, coatings and application methods perform for you. They can measure it with respect to gasses including water vapour, oxygen, nitrogen, argon and CO2 – along with every other gas or gas combination you can use.  Not just for the films materials themselves, but also for the completed baked products and packaging as well. 

Unfortunately vapours have the ability to pass straight through most barriers.  Edible cellulose films are a good example of this – they prevent liquid flow are is virtually no barrier at all to water vapour.  To make things worse, the way the films and coatings are applied can also make a big difference – as can cooking temperatures.

With Versaperm equipment results can sometimes be measured in as little as 30 minutes for many films, coatings and vapours.  Results are accurate in the Parts Per Million (PPM) to Parts Per Billion (PPB).

As well as manufacturing and marketing the equipment, Versaperm also offers a laboratory based permeability testing service and a technical consultancy.
