To make perfect pies, pastries and pizzas you need to understand permeability.  Particularly the vapour permeability of edible films and coatings.

Edible films keep separate parts of a product away from each other – for example pie filling from pastry or a pizza's base from its topping.  They also protect against contamination, maintain aromas and can even create modified atmosphere areas within a product.  However there is a problem – vapour permeability.  And this is where Versaperm comes in.

The issue is that a film that can keep the liquid or "wet" parts of a product apart, may well be virtually useless at keeping the vapours from the parts away from each other.  Unfortunately vapours have the ability to pass straight through most barriers.  Edible cellulose films are a good example of this – it prevents liquid flow but is virtually useless at when it comes to water vapour.  To make things worse, the way the films and coatings are applied can also make a big difference – as can cooking temperatures.

Versaperm's latest vapour permeability meter range can show you just how well your films, coatings and application methods perform for you. They can measure it with respect to gases including water vapour, oxygen, nitrogen, argon and CO2 – along with every other gas or gas combination you can use.  Not just for the films materials themselves, but also for the completed baked products as well. 

With Versaperm equipment results can be measured in as little as 30 minutes for many films, coatings and vapours.  Results are accurate in the Parts Per Million (PPM) to Parts Per Billion ranges and the compoany's extended new sensor range can be used to measure permeability for almost any gas or vapour.

Unusually the same equipment used to measure films and coatings can also be used for measuring MAP and packaging – leading, once again, to improved product freshness, quality and shelf life.
